Chef Manuel Romero has created a special Farm-to-Chef menu showcasing Connecticut Grown ingredients as part of the initiative sponsored by the state Department of Agriculture’s Farm-to-Chef Program.

Georges Laval dinner
Vincent Laval, one of the finest producers in Champagne, is coming to Olea. Champagne Georges Laval is a tiny estate of 2.5 hectares, which produces approximately 14,000 bottles a year. It has been certified organic since 1971, but was actually organic long before then. The vineyards are horse plowed, and each bottle is riddled by hand, disgorged by hand, and even labeled by hand. Vincent is currently the President of the Organic Champagne Society, the Association des Champagnes Biologiques.
